7 small ripe bananas, 1 ⅓ cup all-purpose flour, 1 egg, 1 cup nuts (pecans or walnuts), 3 tablespoons coconut oil (melted), 1 tablespoon cinnamon, 1 teaspoon baking powder, ¼ teaspoon baking soda.
Peel and mash ripe bananas in a large bowl until smooth. The riper the bananas, the sweeter the bread.
Add the egg and melted coconut oil to the mashed bananas, stirring well to combine.
In a separate bowl, mix flour, cinnamon, baking powder, and baking soda.
Fold the dry mixture gently into the banana mixture until just combined. Do not over-mix to keep the bread fluffy.
Fold in nuts gently, preheat the oven to 180°C (350°F), and line a loaf pan with baking paper. Pour the batter evenly into the pan.
Bake for 1 hour and 10 minutes, or until a toothpick inserted in the center comes out clean. Cool before slicing.
