You'll need: - Puri (store-bought or homemade) - Boiled potatoes - Chickpeas or sprouts - Tamarind chutney - Fresh coriander, mint, and spices
If you're making puris at home, knead dough and roll out small, thin circles. Fry them until crispy. If you're using store-bought puris, simply keep them ready for filling.
Mash boiled potatoes and mix them with boiled chickpeas or sprouts. Add a pinch of salt, cumin powder, and black salt to enhance the flavor.
Blend tamarind, mint leaves, coriander, green chilies, black salt, and spices. Add chilled water and refrigerate to enhance the taste.
Carefully make a small hole in each puri. Fill it with the potato-chickpea mixture and top it with a spoonful of tangy tamarind water.
Serve immediately after filling the puris to avoid them getting soggy. You can serve the pani puri with extra chutneys and spices on the side.
