Step 1

Make the dough by mixing flour with water until smooth and cover it and let it rest for 20 mins.

Step 2

Prepare the filling by using finely chopped veggies or meat o paneer. Mix ginger garlic paste, soy sauce, salt and pepper.

Step 3

Roll small dough circles, stuff the filling and seal. Steam for 10-12 minutes until cooked.

Step 4

Roast or boil the tomatoes and blend them with soaked red chilies, sesame seeds, garlic, ginger and peanuts into a smooth chutney.

Step 5

Mix in lemon juice, salt, and enough water to get a pourable soup consistency. This will be jhol achar.

Step 6

Add more chilies or a pinch of cumin/hing for deeper flavor.

Step 7

Place hot momos in a bowl, pour warm jhol generously over them, garnish with coriander and enjoy the kick.
