Gather all the essential ingredients, including purpose flour, baking powder, unstaled butter, sugar, fresh mango puree, a pinch of salt, and vanilla essence.

Preheat your oven to 180 degrees Celsius and then line a baking tray with parchment paper, or you can simply grease it lightly.

Take a bowl and whisk softened butter and sugar until it turns light and fluffy.

Gradually add mango puree to the butter-sugar; you can also add vanilla essence.

Fold the flour, baking powder, and a pinch of salt, but don’t overmix it.

Add a spoonful of dough onto the tray and bake it for 15-20 minutes till the edges turn golden-brown.

Your mango cookies are ready, let them cool down and serve them with coffee or tea.
