Osaka is 4-0 in Grand Slam quarterfinals, including a victory en route to the Australian Open title in 2019.
Hsieh is ranked 71st and has a history of inconsistency.
But she’s 8-2 against top 10 players, including two wins over the reigning world No. 1 -- Simona Halep at Wimbledon in 2018, and Naomi Osaka at Miami in 2019.
Rebecca Marino, a former top-40 player competing in a major tournament for the first time in eight years, was beaten by No. 19-seeded Marketa Vondrousova 6-1, 7-5.
Osaka will now square off with the winner of another last-16 clash between No.7 seed Elina Svitolina and Sofia Kenin of America for a place in the last-four.
The 33-year-old Hsieh came from a set down to prevail 4-6 7-6(4) 6-3 as her unorthodox style frustrated, perplexed and finally wore down U.S. and Australian Open champion Osaka.
Hsieh will battle Pliskova`s compatriot, two-times Wimbledon champion Petra Kvitova, for a place in Saturday`s final.
The Japanese player next meets sixth seed Elina Svitolina for a place in the semi-finals.
The Japanese fourth seed had to come back from a set down for a second successive match at Melbourne Park, having survived a big scare against Taiwan's wily Hsieh Su-Wei on Saturday.
Former champion Angelique Kerber was driven to distraction by the unorthodox game of world number 88 Hsieh Su-wei but overhauled the Taiwanese battler 4-6 7-5 6-2 to reach the quarter-finals of the Australian Open on Monday.
